Nerpy's Magnificent Jerk Potato Salad & Stuffed Jerk Potato Croquette Bombs — Caribbean Appetizer

This recipe features Nerpy's Jerk Seasoning and Nerpy's One Drop Green Seasoning, bringing authentic Caribbean flavor to your kitchen. Creamy mashed Russet potato bombs stuffed with jerk chicken and pork, served two ways as a plated potato salad or rolled in flaxseed and fried into crispy croquettes, all drizzled with Nerpy's One Drop Green Seasoning. Ingredients

  • Canadian Russet potatoes
  • Butter (2 tablespoons per potato)
  • Saran wrap
  • Nerpy's Authentic Jerk Seasoning
  • Boneless jerk chicken breast (pre-cooked)
  • Jerk pork (pre-cooked, approx. 1/4 lb)
  • Avocado
  • Tomato
  • Cabbage (steamed)
  • Carrots
  • Celery leaf
  • Flaxseed
  • Crackers (crushed)
  • Egg white
  • Oaks Organic Coconut Oil
  • Nerpy's One Drop Green Seasoning (Jamaican Pesto)

Instructions

  1. Pre-cook 1 chicken breast and approximately 1/4 pound of jerk pork; set aside.
  2. Boil 2 Russet potatoes until soft; mash, incorporating 2 tablespoons butter per potato.
  3. Spread saran wrap across a cutting board.
  4. Place 1 tablespoon mashed potato on wrap; cover with another wrap layer and press to a pancake shape.
  5. Add a teaspoon of pre-cooked chicken, jerk pork, or vegetables to the center.
  6. Use wrap ends to fold and shape into a ball (potato bomb).
  7. For salad service: cut potato bombs in half; serve with mixed vegetables and drizzle with Nerpy's One Drop Green Seasoning.
  8. For croquettes: soak formed bombs in egg wash.
  9. Coat with a mixture of flaxseed and crushed crackers.
  10. Heat coconut oil to medium heat.
  11. Fry croquettes until brown on all sides, maintaining 2-inch spacing.
  12. Serve with vegetables and a drizzle of Nerpy's One Drop Green Seasoning.
