Nerpy's Spicy Tropical BBQ Spatchcock Chicken — Caribbean BBQ Recipe

Ingredients
- 1 whole chicken
- Nerpy's One Drop Green Seasoning (or all-purpose seasoning)
- Nerpy's Spicy Tropical BBQ Sauce
- Oaks Extra Virgin Coconut Oil
- 3-4 potatoes
- 1 whole cucumber
- 1 tomato
- Garlic cloves
- Thyme sprigs
- Dried herbs (basil, thyme leaves, black pepper, garlic powder)
- Sea salt
- Red onion
- Feta cheese
Instructions
- Rinse and pat dry the chicken.
- Cut down the middle of the chest, flatten, and remove the backbone to spatchcock.
- Rub Nerpy's Green Seasoning throughout the bird; let marinate 30+ minutes.
- Heat coconut oil in a cast-iron skillet to medium; add garlic and thyme.
- Place chicken skin-side down; cook 10-12 minutes, shaking occasionally.
- Flip skin-side up; cook another 10-12 minutes until browned.
- Preheat oven to 375°F.
- Place skillet with chicken in oven; cook 20-25 minutes until internal temperature reaches 160°F.
- Remove from oven; baste generously with Nerpy's Spicy Tropical BBQ Sauce.
- Prepare potatoes: cut into wedges, season with dried herbs and sea salt; fry or bake until golden.
- Plate chicken with diced cucumber, tomato, red onion, and crumbled feta cheese.
