Nerpy's Spicy Coconut Curry Chickpeas & Romano Beans with Basmati Rice — Vegan Recipe

This recipe features Nerpy's Curry Seasoning and Nerpy's Gold Hot Sauce, bringing authentic Caribbean flavor to your kitchen. Ingredients

• Nerpy's Spicy Curry Seasoning (3 heaping tablespoons)
• 1 can Celebes Organic Coconut Milk
• Oaks Hempseed Oil or Oaks Coconut Oil (1 tablespoon)
• 1 can chickpeas
• 1 can romano beans
• 1 teaspoon sea salt
• Mixed greens (spinach, green beans, kale)
• Basmati rice
• 1/2 medium Spanish onion, chopped
• 1 tablespoon green onion/scallion, chopped
• Nerpy's Gold Very Hot Pepper Sauce (to garnish)

Instructions

1. Heat 1 tablespoon hempseed oil in saucepan on high; add chopped onion with a teaspoon of water.
2. Sauté onion until lightly browned; reduce to medium heat.
3. Add 3 tablespoons Nerpy's Spicy Curry Seasoning; mix thoroughly.
4. Pour in coconut milk; bring to a boil.
5. Add chickpeas and stir; add romano beans; mix in 1 teaspoon sea salt.
6. In a separate pan, blanch mixed greens with a little coconut oil and water until just wilted.
7. Prepare basmati rice separately according to package instructions.
8. Plate rice as a base (or chickpea-bean mixture as base); layer remaining ingredients.
9. Garnish with green onion and fresh parsley; drizzle with Nerpy's Gold Very Hot Sauce.
