Nerpy's Oven Roasted Jerk Turkey — Jamaican Holiday Recipe

Ingredients

  • 1 whole turkey
  • Nerpy's Authentic Jerk Seasoning (approx. 2-3 teaspoons per quarter)
  • 1 tablespoon butter or coconut oil
  • Garlic powder
  • Onion slices (for gravy)
  • Mushrooms (for gravy)
  • Cornstarch (to thicken gravy)

Instructions

  1. Begin thawing frozen turkey in refrigerator approximately 3 days before cooking.
  2. Two days prior, wash and clean turkey in cold water or vinegar brine; pat dry and remove innards, ties, and cords (retain neck and cords).
  3. Melt butter or coconut oil in a small bowl; incorporate garlic powder and mix well.
  4. Apply garlic butter mixture under turkey skin above breast and on leg meat to maintain moisture.
  5. Apply Nerpy's Jerk Seasoning liberally into all cavities, neck area, and surface; cover with foil and refrigerate.
  6. Remove turkey from refrigerator 3 hours before cooking to reach room temperature.
  7. Preheat oven to 260C / 500F.
  8. Grease roasting pan; tuck wing tips under and truss legs together with retained cords.
  9. Place turkey breast-side-down in center of pan; roast 30 minutes.
  10. Reduce temperature to 163C / 325F; after one hour rotate pan and baste with pan juices.
  11. Reduce temperature to 130C / 266F; continue roasting 2-2.5 hours until breast reaches 70C / 161F internally.
  12. Remove turkey and rest minimum 30 minutes before carving.
  13. For gravy: combine excess marinade with pan drippings, onion slices, and mushrooms in a pot; thicken with cornstarch paste.
  14. Serve alongside candied yams, roasted potatoes, boiled corn, garden salad, and rice with pigeon peas.
