Nerpy's One Drop Cod Fish with Green Seasoning — Caribbean Salted Cod Recipe
This recipe features Nerpy's One Drop Green Seasoning, bringing authentic Caribbean flavor to your kitchen. Tender desalted cod fish sauteed with onions, tomatoes, and carrots in Oaks Coconut Oil and finished with Nerpy's One Drop Green Seasoning for a simple, gluten-free, all-natural Caribbean weekday meal. Ingredients
- 1/4 lb salted cod fish (or salted pollock)
- Nerpy's One Drop Green Seasoning (2 teaspoons)
- Oaks Extra Virgin Coconut Oil (1 tablespoon)
- 1 whole onion, sliced
- 1 whole tomato, diced
- 1-2 whole carrots, shredded
Instructions
- Desalt the cod fish by boiling twice in fresh water (changing water between boils) or soaking overnight.
- Heat pot with 1 tablespoon of Oaks Coconut Oil.
- Add sliced onion and saute until softened.
- Add diced tomato and cook down.
- Add shredded carrots.
- Add 1/4 lb desalted cod fish and gently fold into the vegetables.
- Add 2 teaspoons of Nerpy's One Drop Green Seasoning; stir to combine.
- Cook until heated through and flavors meld together.
- Serve with rice, ground provisions, or as desired.
