Nerpy's Authentic Vegan Rasta Pasta with Ackee & Jamaican Pesto — Plant-Based Caribbean Recipe

Ingredients
- Ackee (canned or fresh)
- Red bell pepper
- Yellow bell pepper
- Green bell pepper
- Carrots
- Garlic
- Linguine pasta
- Nerpy's One Drop Green Seasoning (Jamaican Pesto)
- Oaks Coconut Oil
- Onion
- Parsley (fresh or dried)
- Sea salt
- Tomatoes
- Tomato paste
Instructions
- Cook linguine pasta in salted boiling water to al dente; reserve some pasta water before straining.
- Heat coconut oil in a large pan; saute onion and garlic until softened.
- Add diced tomatoes and cook down.
- Add carrots; cook a few minutes.
- Add tomato paste and cook to release flavors.
- Add a few spoons of reserved pasta water to help cook the vegetables.
- Add all three bell peppers; saute approximately 3 minutes to desired crunchiness.
- Gently fold in the ackee.
- Strain pasta and add to the vegetable mixture; toss to combine.
- Drizzle generously with Nerpy's One Drop Green Seasoning.
- Plate and garnish with fresh parsley.
